Gas supply brought in and tested, new appliance sited and flued, heating circuit flushed and reconnected, then the oil appliance decommissioned.

What the old system leaves behind
Oil systems often run hotter and dirtier. A powerflush or at least a thorough chemical clean and a magnetic filter is genuinely warranted here.
The tank
Draining and removing a bunded oil tank is a separate task with its own disposal requirements — worth agreeing before the boiler date.
